Kusaya + Cheese?!

Kusaya is salted, dried and fermented fish and cheese is, well, cheese – but the combination? Kusaya is one of Hachijojima’s trademark products, so trying to see how it fits with cheese was only natural. Although the taste might surprise you at first, as the smoky flavor spreads in your mouth in perfect harmony with the cheese’s texture you will find yourself inadvertently reaching for the next piece! And if you think this island delicacy is a good match for just sake or shochu, think again that it goes great with white wine too!

If you want to try it in the most appropriate way, the company selling it, Aigae Suisan, has opened its own bar in Tokyo, so be sure to check it out!
